Basically if theres not a sign, its fine to camp. There are lots of secondary dirt roads that leave the highway, if there not locked you can go through them. If its just a closed gate without a lock then make sure you close it behind you when you pass through (thats to keep the cattle in). If you're about to enter private land there will be a sign indicating so. Most people don't mind if you're passing through their land but you should get permission ahead of time if possible.
You can use the "hike index" drop-down menu and select "backpacking" for a list of good hikes for backpacking. Its not comprehensive but its a pretty good list. If you're looking for group hikes you may want to check out some of the local clubs. Theres one called 'friends hiking club' that regularly posts their trips on this site, theres also
http://www.arizonahikers.com its a similar site to this one but its more socially oriented. I think they're doing a group hike of the month right now so there should be plenty of opportunity to find new people to hike with.
