Canning jackrabbit.

A friend of mine from southern AZ. just posted up that she was canning jackrabbit (with photo). Anyhow I knew our friends from Australia called them "underground mutton", but still canning? :sk: A little searching on the interwebs and I found some delightful bunny recipes from the Ladies Home Journal - October, 1918.

I wouldn't can it, but it was a shame that Whole Foods pulled the plan to start selling rabbit at some pilot stores, due to protest from PETA types. Rabbits breed like, I don't know, something that breeds fast, and are a nice alternative to chicken and pork. I imagine that roast rabbit could taste good. Could taste like a specific fowl, too, just so long as it isn't foul.

I was at a restaurant on Camelback Rd when a lady came in and before being seated asked loudly if they "served bunnies here?"
The hostess let her know that they did have a meal that had rabbit in it. Then the patron made a huge loud scene with her only one-sided argument being how bunnies are like the cutest animal and how dare they?!?
Her date was more than embarrassed.

My dad used to joke about a great recipe he had for Korean chicken but my mom wouldn't let him kill one and grill it. My Vietnamese friend gives me grief about how much I spend on vet bills for my dogs. There were no old dogs in his village. My old hiking buddy from Sun City used to trap rabbits in his backyard, field dress them and keep them in the freezer to supplement his Air Force pension. The Great Circle of Life. Even if I supplement my retirement with bunnies and cat food, my calculations show that I can afford to retire about 5 years after I die. :kf:
