How many people can one find hiking along the AZ trail south of Tucson? Is it sparse where you'll never see anyone or can you expect to run in to a few people during a hike?

The only people I've ever seen on the Arizona Trail south of Tucson are the other people I'm hiking with. I've hiked one section by myself one day and never saw another soul.

From Gardner Canyon to Rincon Creek (passages 5-8) you have a fair chance of meeting a few dayhikers or mtn bikers, if the weather is ok and it's a weekend. Many of the times I've been out I haven't seen anyone though, so I wouldn't count on it. I have limited hiking in passages 1-4 but I believe they are even less popular.

It is not common to see many people on the AZT away from TH's.

In the 12 sections I've done (18 - 32), I've only seen people on the Flagstaff-area sections, and a few around the Pine Trailhead so far.

While at Freeman Road TH for less than an hour today a fellow appeared off the trail as I was sitting in the car reading emails and getting ready to leave. First SoBo hiker I've encountered. Wish I had gotten his name, said he is from Sedona.
Maybe two gallons public water left in the resupply box there, and 5-6 at Florence-Kelvin TH.
