Just got back from Buckskin Gulch and was blown away. I figured I'd list some of my favorites and ask others to do the same. Might get some good ideas for my next hike. My tops:
1. Kalalau Trail, Napali Coast, Kauai
2. Buckskin Gulch, UT
3. West Fork, Sedona, AZ (after the maintained trail ends)

Re: What is your favorite backpacking trail?
Today I finished a Wonderland Trail thru-hike. It's a 93 mile trail around Mt. Rainier in Washington State. The scenery is as good as it gets when you and the mountain are not in a cloud. Water is abundant, clear, and cold. The trail is difficult (22K up and 22K down) but very rewarding. There are a lot of people hiking it, but it didn't seem crowded except for a couple places popular with the day-hike crowd. I recommend it.
