A. phillipsiana. Closely related to agaves of northern Mexico, it was likely introduced to the canyon by pre-columbian people as a crop plant. It was used for food, fiber, medicine, and alcoholic and non-alcoholic beverages. It is supposed to be one of the sweetest and best tasting agaves. They are usually found with roasting pits and other archaeological sites nearby.
