Open crunchy tortilla, melted cheese, and meat. Open bar to add onions, cilantro, salsa, and and guacamole. And in my case some of Trish's homemade salsa. Lucky for me, Tacos Calafia is just around the corner. It's based on Tijuana, Mexico street fare.
