I am supposed to be flying to Las Vegas on Saturday, and have permits to hike rim-to-rim from the North Rim on Monday.
I understand AZ-67 to the North Rim is expected to close at the first real snow. I see that some weather forecasts say there's some chance of snow on Friday night or Saturday morning.
Is my trip likely to be okay? How much snow is needed to close AZ-67?

Google maps currently shows 67 south of Jacob Lake as closed. It also showed it closed last weekend but it was still open.

In normal years, it closes on Dec. 1, except if that happens on a weekend, and then it might go to the 3rd. Scanning past years, when it has closed early it has been announced ahead of time based on the forecast of an upcoming storm, not as a reactive decision based on snow that fell –– ADOT has made the decision to close the road proactively. I recommend following ADOTs social media pages for any announcements. They do issue a press release when it's going to close, so I wouldn't expect to suddenly find a closed gate if you've been paying attention to their announcements.
The current forecast calls for less than one inch of snow at the highest elevations of the Kaibab Plateau, so ADOT may not feel it necessitates an early closure. They're reasonably good at replying to public inquiries, so I'd recommend asking them over asking us.

ADOT published the closure dates which for HWY 67 for 2023 is the morning of Dec 4. Don't expect hwy reopening till at least May 15.

Due to weather, 67 has closed a bit early, per corporate social media:

The following highways will be closing soon or have already closed:
State Route 473 between State Route 260 and Hawley Lake: Thursday, Dec. 7
State Route 261 between Eagar and Big Lake: Friday, Dec. 29
State Route 273 between Sunrise Park and Big Lake: Friday, Dec. 29
On Nov. 15, State Route 366, also known as the Swift Trail, closed about one-half mile past the Coronado National Forest’s Shannon Campground, at the end of the pavement.
