Gravel Bikes and Bikepacking

Greetings,

Can anyone report on some options for 2-3 day gravel bike-packing routes, that are realistically suitable for a gravel bike, not requiring a mountain bike?
Just got a a Giant Toughroad, 29" gravel bike. It came with front and rear racks, and I'm getting my bags together to be ready for slightly cooler weather. Fitting my standard backpacking gear on the bike is no problem, room to spare really. Need to find some loop options now...

Woods Canyon Lake to Willow Springs Lake to Black Canyon Lake. From the Arizona Trailhead at AZ 87 at the Blue Ridge Campground turn off head north on various forest service roads to Long Lake. From Willams AZ forest service road to Dog Town Reservoir.

I have a Giant Yukon 26" hardtail with rear rack panniers, A Giant Talon 27.5" hardtail with a rear rack with Lone Peak panniers that are the front panniers from my Trek 520 Touring bicycle that I use when single day/night riding. I also have a Trek 520 with front and rear rack and panniers from Lone Peak. The Talon
