Ugh.
So, I am officially "pre-diabetic" these days. I'm looking for low glycemic index options for car camping (not such a concern) and especially backpacking. And with the extra energy expenditure from backpacking, does anyone know how much I have to worry about this?? I.e., is it ok for me to rely on carbs if I space them throughout the day? I know, I know, I should ask a doctor, but I'm hoping someone with personal experience can help me out.

Years ago people ate what they could kill and grow and there were no fad diets...and they did just fine.
I wouldn't worry about it, all long-range backpackers I've met are pretty skinny folks.

Since carbs are where we get the majority of our "use it now" energy from food. I would not advise skimping on carbs while hiking, especially since hiking and backpacking takes so much energy.
