Not sure if this is an issue for many, but I follow a very simple food regimen that includes whole grains over processed foods whenever possible. It is work to take the time to cook bread, and even muffins are a bit of a chore. I've begun scoring my basic whole grain hit lately by simply mixing up batches and cooking them in my waffle iron. The end result is much nicer for packing along (...muffins tended to crumble when crushed) and it is just an easy and fast process. You can alter the batch to create either a tender or chewy texture... also by cooking longer a tougher version will emerge.
I throw in corn meal, whole wheat flour, oats, shredded wheat, raisins, baking powder, spices... with a blended mix of skim milk, eggs, vanilla, honey or Stevia, bananas... for a basic mix.
For variety, you can also blend up veggies and use mexican spices...
I just do not like having to pay the extra, if I can even find simple ingredient snacks... that old waffle iron seems to do the trick. Throw in a jar of Natural Peanut butter to dip into and you have a nice high calorie trail snack... better yet, blend up some honey and strawberries premixed with the PB... and get it out of the jar and into a tube for easy squirting on the waffle. Take along salsa if you did the veggie mix version.

I keep trying to incorporate whole grains into my bread, but some batches don't turn out very well. This sounds like a more failsafe method.
