"La Cocina De Casillas" in Miami (606 Live Oak Street)... best red chili i've ever had. A bowl of that and some warm tortillas makes for a very happy tummy.

In Phoenix (Mesa), I always head to "Rancho de Tia Rosa" (a/k/a "Rosas") (McKellips/Val Vista-ish). Tex-Mex style I guess (whole beans, not covered in cheese or sour cream) It's sort of gone down-hill recently, but still good. I prefer the slow-cooked meats: their carnitas platter is always great and the carne asada is the bomb. Beautiful, large and hand-built restaurant in back and a small taco-shop in front (can't get the carne asada in front).

Best way to gain all the calories you just lost hiking the Supes (and maybe a few more): Waldo's BBQ in Mesa (4693 E Main St). Slow roasted dry-rubbed ribs, dipping sauce on the side (as if you need it). These things fall off the bone clean and delicious. Order a half-rack that comes with monster side dishes and 3000 calories later you just call the EMTs for a ride directly to your cardiologist.

@te-wa: You may have a point... however, at Waldos, one does have to slide the bone out, it's not like the rack of meat falls apart when you pick it up. It's never occurred to me that it was over (or under) cooked, it was tender and delicious. I'll have to go back and make a closer inspection!

Used to have work luncheons here when I lived further east, good food. (or at least it was up to five or so years ago)

Denny(second nicest guy on the face of the earth) bought us lunch there today :) Mighty good indeed. Not sure it's "the" best Mexican food in Arizona. I've been to several places that seem very good, I'm not seeing a clear winner in exceptional taste or portions. One thing for sure Guayo's had it going on. After 2pm they were packed and the waitress was on the spot Johnny. The cooks were off a tad on timing, Bob had to wait a little longer for his meal

One of the things I look for is if they make good guac, and whether or not they skimp on it if you order it as a side. That's the preference that I tend to have for California-style, as opposed to the Tex Mex and St. Johns style Mexican food that they serve in my part of the state.

Yes, there really is something called "St. Johns style." One of the things they do that is particularly vile is to put an unseasoned hamburger patty into a tortilla, fold it, deep fry it, and call it a taco. I thought this very gringo until I realized all the local Hispanics make their tacos that way at big parties I've been to. Yikes.

If you really want great actual real Mexican food you have to go to Yuma where there is an outdoor stand in the parking lot of David's Market, 191 S. Avenue B. Wow, it's good...

Ate at Pulpo Loco in Maricopa AZ yesterday - best authentic Mexican food I've had in quite some time... :)

Sun. night we ate at Las Margaritas (I know - creative name) in Camp Verde. I had really high hopes with the flavorful, fresh salsa and interesting cabbage salad type dip they brought out with yummy fresh chips. But then the enchilada sauce and meat in my carne asada burro was just kinda eh... Very disappointed. Not bad or nasty, just not on par with their salsa. Humph.

Kinda how I felt about Guayo's El Rey enchiladas. Fair at best. Now they do have the best service around. The tacos a week earlier where very good and they brought chips/salsa to our starving group round after round after round and in larger quantities each time...lol

I'm still holding Chalo's fajitas as my all time favorite, however forget the service.

Of course living near downtown Phoenix there's little need to go that far. Mom and pop shops all over, just remember to go to the ones you see cops or others dining ;)

Guayo's north of Hwy 60 on Hwy 188 (Guayo's on the Trail?) is my favorite. It's hard to beat their green chiIe. I tried their downtown location after Aravaipa in November 2009, and thought the other location was much better. Heck, I like it even after Kurt called it 'Guanos'.

BTW, we Arizona natives spell it 'chile'. It's not chili, chilie, or chilly willy!

Cops and firefighters. I think firefighters are a slightly better arbiter since they tend to have a little more "down time" while on duty to do the requisite "research". : rambo :

Rito's and Carolina's are also frequently patronized by National Guardspeople and other assorted & sundry government employees. I vouch for both establishments. Big-time. @ Rito's get the green chile burro, and Carolina's best (IMO) is the Oaxaca Special.

Driving west on Hwy60 through Miami, is it a right turn or left turn off 60 onto Sullivan Street to Guayo's El Rey? Think we will give it a try this Sat for dinner. Also, approx where (what landmarks,etc..) driving through Miami is the Sullivan Street turn?

Thank you! Now that is important for a guy who grew-up 7miles from the Texas/Mexico border :) .

Will try out your favorite Chalo's in Globe on another trip.

It's a right turn. Sullivan parallels US60 1 block to the north. You cross the wash and hit Sullivan. The best landmarks are Hostetler Pool just across the street on the south and the Catholic Church just west of El Rey on the north.
