Need ideas for 3 day backpacking trip.

Hi, it's been awhile since I've been on AZ hiking. My wife and I are on a road trip in our rv and working our way down to AZ. We'd like to go on a backpacking trip for my birthday. The GC is our first choice but I don't know if we are going to be able to get a permit. I'll fill out all the info and send it out next week. If we can't get that we'd like ideas for a 3 day backpacking trip. Pretty much hike one day 10 miles or so, camp and hang out the next day and hike out the following day. I'd like something where water won't be an issue and within 2-3 hours of Mesa.. We'll be leaving our pooch at a friends house while we are backpacking. Thanks for any ideas you can offer.
